I love salad. When I was an unemployed freelance writer, being rich meant being able to order a green salad along with the meal when in a restaurant. When I got into a job and got my first salary, I remember going to one of my favourite restaurants, Secular House Canteen opposite JNU in Delhi, ordering my usual butter chicken & garlic naan, but along with those, I also ordered the green salad. I felt rich, perhaps for the first time in life.
Ever since I started cooking, salad has been omnipresent. I judge a person by the way they cut cucumbers. If they cut circles of it, I reject their help. Cucumbers have to be cut slanted, like they do in weddings or five-star-hotels, so that the center is elongated and the seeds are sliced. There has to be a green chilly and a lemon no matter what. Cucumbers, tomatoes and onions are a must. Radish and carrot are welcome. Pepper and salt are worthy companions. Salad has everything that's otherwise missing from a meal. Crunchiness, freshness, tanginess. It's cold, but with the half-sliced green chilly, it is also hot. Green salad is a complete meal by itself and when added along with a meal, it feels no less than luxury. Say salad, feel rich.-
